Pick Up Directly from the Butcher

Our Nose-2-Tail option is perfect for customers committed to using every part of their beef. Purchase the animal live from our farm, customize your cuts, and we’ll guide you through the butcher process from start to finish. Once your beef is dry-aged, cut, and wrapped, you’ll pay processing fees directly to the butcher and arrange pickup. It’s our most cost-effective and most rewarding option.

Reserve your whole or half beef with a $500 non-refundable deposit. Your card will not be charged until we reach out to you.

We'll contact you to discuss details and schedule your harvest date.

You'll receive an invoice for your remaining balance, which must be paid in full prior to harvest date.

You complete a cut sheet — we can help!

We transport your animal to the butcher with a companion to minimize stress.

You pay the butcher directly for processing.

Pick up your finished beef directly from the butcher 4-6 weeks after harvest. Once the butcher contacts you, you’ll have 2-5 days to pick up your order.

Frequently Asked Questions

How much freezer space do I need?
The rule of thumb is 1 cubic foot of freezer space for every 35-40 pounds of cut and wrapped meat. You’ll need a chest freezer for a whole or half beef, while a quarter beef can generally fit in a standard fridge freezer as long as it’s fairly empty.

How do I pick which cuts I want?
We will send you a cut sheet from the processor you are scheduled with. If you would like to see a copy of those ahead of time, just email us.  We will walk you through how to pick the cuts you want.

How much beef should I buy?
A whole beef feeds four people for about a year. A half beef feeds two people for a year, or a family of four for about six months. A quarter beef feeds two people for about six months.
When will my beef be ready after it goes to harvest?
Your beef is dry-aged for 21 days, and then cut and packaged. It will typically be ready to pick up about four weeks after harvest.

How long will my beef last?
Your beef is ready for long-term freezer storage. It comes packaged as individual cuts, vacuum-sealed, and flash frozen. According to the USDA, meat stored constantly at 0ºF remains safe to eat indefinitely. However, quality (taste and texture) will eventually decline over time.

What’s special about your Red Poll cattle?
We are very proud of our Red Poll cattle. Their deep red meat is filled with a higher nutrient load than the typical grain-fed Black Angus beef you usually find in stores or at other local farms. Their fat is yellower than soy- and corn-fed beef, indicating high beta-carotene found in “good” fat. Hidden Creek Farm beef has “terroir" – just like a fine wine, it captures the complex intensity of our Certified Organic pastures. Our cattle are raised with daily human contact, frequent rotations, and sheltered fields, ensuring the low stress and optimal comfort needed to quality-control for healthy beef. We believe that happy cattle make for delicious and healthy beef!

What age are your cattle when you process them?
Hidden Creek Farm “slow-grown” grass-only beef is harvested at 30 months or more. We think that, like a fine wine, there should be no beef before its time! While most farmers grain their beef (either over their entire lifetime or for several months before harvest and then harvest their animals around 18 to 24 months) Hidden Creek beef is “slow-grown” on organic pastures without additives like hormones, antibiotics, synthetic supplements, or grain.

Is grass-fed beef really better?
Hidden Creek Farm beef is high in Omega 3 and CLA (conjugated linoleic acid) and low in Omega 6, which is often associated with increased inflammation and other health issues. An ideal ratio between Omega 6 and Omega 3 in human diets is below 4:1. Grain-fed beef sold in the US often tests at an 11:1 ratio of Omega 6 to Omega 3. That may be fine if you’re splurging on a special dinner out, but hardly fine if one wishes to consume red meats more regularly! Check out this NIH study which indicates that grass-fed meats are actually important to our human diets. We believe that eating healthy meat is compatible with a healthy lifestyle.
