Hidden Creek Farm is dedicated to growing specialty, non-traditional produce, partly because we love them, and partly as an experiment to understand the impact of climate change and pests on these varietals in our local farming environment. Hidden Creek focuses on ‘forgotten’ ingredients, like Gumbo Filé, a traditional Native American thickener for stews and soups, and on culturally intriguing produce and herbs, such as sorrel, Asian mustards, Shungiko, lemongrass, and Hungarian peppers. Availability changes with the season and year.
In 2019, Hidden Creek Farm will be ramping up full-scale mushroom and ginger production using a High Tunnel System and symbiotic plant gas exchange characteristics.
